Ingredients:
– 72 MINI Nilla Wafer cookies
– 1 (7-ounce) bag of unwrapped Rolos
– 8 ounces chocolate chips
– 1 teaspoon coconut oil (optional, for a smoother chocolate coating)
Instructions
1. Preheat the Oven:
Set your oven to 300°F (150°C).
2. Prepare the Cookies:
Arrange 36 mini Nilla Wafer cookies on a baking sheet lined with parchment paper.
3. Add the Rolos:
Place a Rolo candy in the center of each Nilla wafer cookie.
4. Warm the Rolos:
Heat the baking sheet in the oven for 90 seconds. The Rolos should be slightly soft, but not fully melted. *Note: Do not exceed 90 seconds, as you want the Rolos to soften, not completely melt.*
5. Assemble the Bites:
Remove from the oven and gently place another Nilla wafer cookie on top of each Rolo, pressing down lightly. *Do not squish the Rolo, just press the cookie on top.*
6. Chill the Cookies:
Refrigerate the cookie sandwiches for 15-20 minutes until the chocolate has set and the cookies are firm.
7. Melt the Chocolate:
If using chocolate chips, melt them in a double boiler or microwave. For a smoother consistency, add 1 teaspoon of coconut oil. Alternatively, you can use melting chocolate wafers for a glossy finish.
8. Dip and Coat:
Using a chocolate dipper or fork, dip each cookie sandwich into the melted chocolate. Tap the fork against the bowl to remove any excess chocolate.
9. Set the Chocolate:
Place the dipped cookies back on the parchment-lined baking sheet and refrigerate until the chocolate hardens.
