  • 3 ripe bananas, mashed up
  • 2 eggs
  • 1 box of yellow cake mix
  • Nuts (optional)

Instructions

  1. Preparing the Batter:
  • Mash Bananas: In a large bowl, mash the ripe bananas until smooth.
  • Mix Ingredients: Stir in the eggs and mix well. If using nuts, add them now.
  • Combine with Cake Mix: Gradually add the cake mix to the banana mixture and stir until well combined.

  • Preheat Oven: Set your oven to 350°F.
  • Prepare Pans: Grease 2 small loaf pans.
  • Bake: Pour the batter evenly into the loaf pans and bake for about 40 minutes, or until a toothpick inserted into the center comes out clean.
  1. Cooling and Serving:
  • Cool: Let the bread cool in the pans for a few minutes, then transfer to a wire rack to cool completely.
  • Serve: Enjoy one loaf warm, and if desired, freeze the other for later.
