Chicken Cordon Bleu Casserole

Ingredients:

  • 2 cups cooked chicken, diced or shredded
  • 2 cups cooked ham, diced
  • 2 cups Swiss cheese, shredded
  • 1 cup breadcrumbs
  • 4 tablespoons butter, melted
  • 2 cups cooked pasta (such as penne or rotini)
  • 1 1/2 cups milk
  • 1/2 cup chicken broth
  • 3 tablespoons all-purpose flour
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried parsley

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, combine the cooked chicken, diced ham, and cooked pasta. Spread this mixture evenly in the prepared baking dish.
  3. In a separate bowl, mix together the melted butter and breadcrumbs. Sprinkle this mixture over the chicken and ham in the baking dish.
  4. In a saucepan over medium heat, melt 2 tablespoons of butter. Whisk in the flour and cook for 1-2 minutes until the mixture turns golden brown.
  5. Gradually whisk in the milk and chicken broth, stirring constantly to avoid lumps. Cook until the sauce thickens, about 5 minutes.
  6. Stir in the Dijon mustard, garlic powder, onion powder, dried thyme, dried parsley, salt, and pepper.
  7. Once the sauce is smooth and thick, remove it from the heat and stir in 1 cup of shredded Swiss cheese until melted.
  8. Pour the sauce evenly over the chicken, ham, and pasta in the baking dish.
  9. Sprinkle the remaining 1 cup of shredded Swiss cheese on top.
  10. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the cheese is golden brown on top.
  11. Let the casserole cool for a few minutes before serving.
