Homemade Banana Pudding Cookies

Ingredients:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 package (3.4 oz) instant banana pudding mix
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups white chocolate chips
  • 1 cup vanilla wafer crumbs

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Stir in the mashed bananas.
  3. In another bowl, whisk together the flour, banana pudding mix, baking soda, and salt. Gradually add to the banana mixture, mixing until just combined. Fold in the white chocolate chips and vanilla wafer crumbs.
  4. Drop dough by rounded tablespoonfuls onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake for 10-12 minutes or until the edges are lightly golden. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
