Fantastic Lemon Butter Fillet

Ingredients:

  • ½ cup butter
  • 1 lemon, juiced
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • ½ teaspoon dried parsley
  • 3 cloves garlic, minced
  • 6 (4 ounce) fillets cod
  • 2 tablespoons lemon pepper

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan over medium heat, melt the butter. Stir in the lemon juice, salt, black pepper, dried parsley, and minced garlic. Bring to a boil, then reduce heat and simmer for about 10 minutes, or until slightly thickened.
  3. Arrange the cod fillets in a single layer on a medium baking sheet.
  4. Drizzle half of the lemon butter mixture over the cod fillets. Ensure each fillet is evenly coated. Sprinkle with lemon pepper.
  5. Cover the baking sheet with foil. Bake in the preheated oven for 15 to 20 minutes, or until the fish flakes easily with a fork.
  6. Once baked, carefully remove the foil and pour the remaining lemon butter mixture over the fillets.
