Ingredients
- 1 cup fresh lemon juice (about 6-7 lemons)
- 4 cups pure pineapple juice (fresh or cold-pressed without added ingredients)
- 1 cup near-boiling water
- 1 cup granulated sugar
- 4 cups very cold water
Instructions
- Juice the Lemons: In a large glass measuring cup, juice the lemons (strain to remove any pulp or seeds).
- Mix Lemon and Pineapple Juice: Pour the lemon juice into a serving pitcher (make sure your pitcher can hold at least 12 cups). Stir in the pineapple juice. Set aside.
- Make Simple Syrup: In a large glass measuring cup, add hot water and stir in sugar until dissolved and the syrup is clear.
- Combine Simple Syrup: Stir the simple syrup into the pitcher.
- Add Cold Water: Stir in the remaining cold water a little at a time, tasting until you get your desired sweetness. (Remember, when serving over ice, the ice will water it down a bit. I like mine on the sweeter side because of this.)
