Fiesta Chicken Casserole

Ingredients

  • 2 ½ cups cooked and shredded chicken
  • 1 cup corn kernels
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup salsa
  • 1 cup sour cream
  • 10 oz pasta
  • 2 tablespoons taco seasoning
  • 2 cups Mexican cheese blend

Instructions

  1. Preheat oven to 350°F.
  2. Bring a large pot of water to boil and cook pasta 2 minutes short of package directions. Drain and set aside.
  3. In a large bowl, mix together sour cream, salsa, and taco seasoning until well combined.
  4. Add shredded chicken, black beans, corn, and 1 cup of cheese to the sour cream mixture. Stir until evenly combined.
  5. Stir in the cooked pasta until well incorporated. Pour the mixture into a large casserole dish.
  6. Top with the remaining cheese.
  7. Bake for 20-25 minutes until the cheese is melted and bubbly, and the casserole is heated through.
  8. Serve hot and enjoy the fiesta of flavors!
