Kielbasa Sausage Cheesy Potato Casserole

Ingredients

– 1 lb kielbasa sausage, sliced
– 4 large potatoes, peeled and thinly sliced
– 1 onion, chopped
– 2 cups shredded cheddar cheese
– 1 cup milk
– 2 tablespoons all-purpose flour
– 2 tablespoons unsalted butter
– 1 teaspoon paprika
– Salt and pepper to taste
– Fresh parsley for garnish

Instructions

Preheat the oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
Layer half of the sliced potatoes in the bottom of the dish, followed by half of the sliced kielbasa and half of the chopped onion. Sprinkle with half of the cheddar cheese. Repeat the layers.
In a saucepan over medium heat, melt the butter. Stir in the flour to create a roux, then gradually whisk in the milk. Continue to cook and stir until the mixture thickens. Season with paprika, salt, and pepper.
Pour the sauce evenly over the layered ingredients in the baking dish.
Cover with aluminum foil and bake for 1 hour. Remove the foil, and bake for an additional 15 minutes, or until the top is golden and bubbly.
Garnish with fresh parsley before serving.
