Cinnamon Sugar Churro Cookies

Ingredients

– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– 1/2 cup packed brown sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 2 1/2 cups all-purpose flour
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 2 teaspoons ground cinnamon
– 1/4 cup sugar (for rolling)
– 1/2 teaspoon ground cinnamon (for rolling)
– 1 cup chocolate chips or chocolate chunks (for stuffing)

Directions

1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
4. In a separate bowl, whisk together the flour, baking soda, salt, and 2 teaspoons of ground cinnamon.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. In a small bowl, mix together the 1/4 cup sugar and 1/2 teaspoon ground cinnamon for rolling.
7. Take a tablespoon of dough, flatten it, place a few chocolate chips or a chocolate chunk in the center, and then fold the dough around the chocolate to seal it inside.
8. Roll the stuffed dough balls in the cinnamon-sugar mixture and place them on the prepared baking sheet.
9. Bake for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
