– 1 cup unsalted butter, softened
– 2 large eggs
– 2 1/2 cups all-purpose flour
– 1 teaspoon baking soda
– 1 teaspoon vanilla extract
– 1 cup granulated sugar
– 1/2 cup brown sugar, packed
– 1/2 teaspoon salt
– 1 cup white chocolate chips
– 1/2 cup strawberry jam
– 1/2 cup cream cheese, softened
Instructions
1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer until light and fluffy (about 2-3 minutes).
3. Beat in the eggs one at a time, fully incorporating each before adding the next. Mix in the vanilla extract.
4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
5. Gently fold in the white chocolate chips.
6. In a small bowl, combine the strawberry jam and softened cream cheese until smooth. This mixture will be the filling for your cookies.
7. Scoop tablespoon-sized portions of dough onto the prepared baking sheet. Use your thumb or the back of a spoon to create an indent in the center of each dough ball.
8. Spoon a generous tablespoon of the strawberry cream cheese mixture into each indent, making sure not to overfill.
9. Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are golden brown. Be careful not to overbake.
10. Let the cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
