Ingredients
– 1 cup pecans, chopped
– 7 tbsp unsalted butter
– 1/3 cup granulated sugar
– 1 cup brown sugar
– 2 eggs
– 1 tbsp pure vanilla extract
– 2 cups all-purpose flour
– 1/2 tsp baking soda
– A pinch of salt
– Pecan halves for topping
Instructions
1. Preheat oven to 350ºF (175°C) and line 2 baking sheets with parchment paper.
2. Beat butter, granulated sugar, and brown sugar with an electric mixer until light and creamy.
3. Add eggs and vanilla extract, and beat for an additional 2 minutes.
4. Mix in flour, baking soda, and salt until just combined.
5. Scoop balls of dough onto the prepared baking sheets and place a pecan half on top of each cookie.
6. Bake for 10 to 15 minutes, or until golden brown.
7. Cool cookies on a wire rack.
