Banana Donut Holes

Ingredients

– 2 ripe bananas, mashed
– 1 cup all-purpose flour
– 1/4 cup granulated sugar
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 1/2 teaspoon ground cinnamon
– 1/4 cup milk
– 1 large egg
– 1 teaspoon vanilla extract
– Vegetable oil for frying
– Powdered sugar for dusting (optional)

Instructions

1. In a large mixing bowl, combine the mashed bananas, milk, egg, and vanilla extract. Mix until well combined.
2. In another bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and ground cinnamon.
3. Gradually add the dry ingredients to the banana mixture, stirring until just combined. Be careful not to overmix; a few lumps are okay.
4. In a deep skillet or pot, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F (175°C).
5. Using a small cookie scoop or spoon, carefully drop small balls of batter into the hot oil. Fry in batches, making sure not to overcrowd the pan.
6. Cook for about 2-3 minutes on each side, or until golden brown. Use a slotted spoon to remove the donut holes and place them on a paper towel-lined plate to drain excess oil.
7. If desired, dust the warm donut holes with powdered sugar before serving.
