Ingredients
For the Filling:
– 6 fresh peaches, peeled and sliced (or 4 cups canned peaches, drained)
– ¾ cup granulated sugar
– 1 tsp cinnamon
– 1 tsp vanilla extract
– 1 tbsp lemon juice
– 2 tbsp cornstarch
For the Cobbler Topping:
– 1 cup all-purpose flour
– 1 cup granulated sugar
– 1 tsp baking powder
– ¼ tsp salt
– ¾ cup whole milk
– ½ cup unsalted butter, melted
Instructions
Prepare the Filling:
1. Preheat the oven to 375°F (190°C).
2. In a large bowl, combine the sliced peaches, sugar, cinnamon, vanilla extract, lemon juice, and cornstarch. Stir until evenly coated.
3. Pour the peach mixture into a greased 9×13-inch baking dish.
Make the Topping:
1. In another bowl, whisk together the flour, sugar, baking powder, and salt.
2. Stir in the milk until the batter is smooth.
3. Pour the melted butter into the batter and gently stir to combine.
Assemble the Cobbler:
1. Pour the batter evenly over the peach mixture in the baking dish. Spread gently to cover most of the peaches but leave a few exposed for texture.
Bake:
1. Bake for 40–45 minutes, or until the topping is golden brown and cooked through.
Cool and Serve:
1. Let the cobbler cool slightly before serving. Serve warm with a scoop of vanilla ice cream or whipped cream for the ultimate dessert experience!
