Steak Bites and Rotini in Garlic Parmesan Sauce

Ingredients

For the Steak Bites:


– 1 lb sirloin steak, cut into bite-sized pieces
– Salt and pepper to taste
– 3 garlic cloves, minced
– 2 tbsp butter
– 1 tbsp chopped fresh parsley

For the Rotini and Garlic Parmesan Sauce:


– 12 oz rotini pasta
– 3 tbsp unsalted butter
– 4 garlic cloves, minced
– 1 cup heavy cream
– 1 cup grated Parmesan cheese
– 1 tsp Italian seasoning
– Salt and pepper to taste

Instructions

Boil rotini pasta in salted water until al dente (about 10-12 minutes).
Drain and set aside, reserving 1/2 cup of pasta water.
Season the steak bites with salt and pepper.
Heat a skillet over medium-high heat and melt butter.
Sear the steak bites for 2-3 minutes per side until browned and medium-rare.
Add minced garlic and toss for 1 minute until fragrant.
Remove from the skillet and set aside.
In the same skillet, melt butter over medium heat.
Add minced garlic and cook for 1 minute.
Pour in the heavy cream and Italian seasoning, stirring constantly.
Gradually add Parmesan cheese, whisking until fully melted and creamy.
Season with salt and pepper to taste.
Add the cooked rotini to the sauce, tossing to coat well.
If the sauce is too thick, add a bit of the reserved pasta water.
Return the steak bites to the skillet and toss gently with the pasta.
Plate the pasta and steak bites.
Garnish with chopped parsley and extra Parmesan if desired.
