Marry Me Chicken Pasta

Ingredients

– 4 boneless, skinless chicken breasts
– Salt and pepper, to taste
– 2 tablespoons olive oil
– 1 tablespoon unsalted butter
– 4 cloves garlic, minced
– 1 cup chicken broth
– 1 cup heavy cream
– 1/2 cup grated Parmesan cheese
– 1 teaspoon Italian seasoning
– 1/2 teaspoon red pepper flakes (optional)
– 8 ounces penne pasta, cooked according to package instructions
– Chopped fresh parsley, for garnish

Instructions

1- Season the chicken breasts with salt and pepper on both sides.

2- Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

3- In the same skillet, add the butter and minced garlic. Cook for 1-2 minutes, or until fragrant.

4- Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.

5- Stir in the heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Cook for 2-3 minutes, stirring occasionally, until the sauce thickens slightly.

6- Return the cooked chicken breasts to the skillet, spooning some of the sauce over the top. Simmer for an additional 2-3 minutes to heat the chicken through.

7- Serve the chicken and sauce over cooked penne pasta, garnished with chopped fresh parsley.
