– 8 breakfast sausage links
– 1 cup pancake mix
– 3/4 cup milk
– 1 egg
– 2 tablespoons vegetable oil
– Maple syrup for serving
Instructions
**Preheat the Oven**
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
**Cook the Sausages**
Cook the breakfast sausage links according to package instructions until slightly browned but not fully cooked. Set aside to cool.
**Prepare the Pancake Batter**
In a medium bowl, combine the pancake mix, milk, egg, and vegetable oil. Stir until just combined, leaving the batter slightly lumpy.
**Form the Pancake Ovals**
Take a spoonful of batter and spread it into an oval shape on the prepared baking sheet. Repeat for the remaining batter, making sure to leave space between each one.
**Add the Sausage**
Place a sausage link at the edge of each pancake oval and roll it up, ensuring the sausage is fully encased.
**Bake**
Bake for 12-15 minutes, or until the pancakes are golden brown and the sausages are cooked through.
