– 2 cups rolled oats
– 1 cup mashed ripe bananas (about 2 large bananas)
– 1/4 cup honey or maple syrup
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon vanilla extract
– 1/4 cup chopped walnuts or almonds (optional)
– 1/4 teaspoon salt
Instructions
1. Preheat your oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
2. In a large bowl, combine the mashed bananas, honey, cinnamon, vanilla, and salt. Stir until well combined.
3. Stir in the rolled oats and chopped nuts (if using).
4. Pour the mixture into the prepared pan, spreading it out evenly.
5. Bake for 20-25 minutes, or until golden and firm.
6. Let the bars cool before slicing into squares.
