Instructions
Step 1: Prepare the Biscoff Cake
Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
In a large bowl, beat the softened butter and Biscoff cookie butter together until light and fluffy.
Add the brown sugar and continue to beat until smooth.
Add the eggs one at a time, beating well after each addition. Then add the vanilla extract.
Alternately add the dry ingredients and milk to the butter mixture, starting and ending with the dry ingredients. Mix until just combined.
Add the sour cream and mix until smooth.
Divide the batter evenly between the prepared pans and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool completely in the pans before transferring to a wire rack.
Step 2: Make the Cheesecake Frosting
In a medium bowl, beat the softened cream cheese and butter until smooth and creamy.
Gradually add the powdered sugar, one cup at a time, beating until fluffy.
Mix in the Biscoff cookie butter and vanilla extract. Add heavy cream if the frosting is too thick, mixing until smooth and spreadable.
Chill the frosting for 15-20 minutes to firm up before frosting the cake.
Step 3: Assemble the Cake
Once the cakes are completely cooled, place one layer on a cake stand or plate.
Spread a generous layer of cheesecake frosting over the top.
Place the second cake layer on top and frost the entire cake with the cheesecake frosting.
Drizzle more melted Biscoff cookie butter over the top of the cake.
Garnish with crushed Biscoff cookies and whole cookies for added texture and decoration.
