Ingredients:
- 1 lb lean ground chicken
- 15 oz canned corn, drained
- 1/2 cup diced red onions
- 10.5 oz condensed cream of chicken soup
- 2 tbsp Cajun seasoning
- 1 tbsp onion powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 cup mayo
- 4 large hamburger buns
- 1 cup shredded mozzarella and cheddar cheese blend
Instructions:
- Preheat your oven to 400°F to get those buns toasty.
- In a big pan on medium-high heat, cook up the ground chicken until it’s all crumbly and cooked through.
- Toss in the canned corn and diced red onions, and keep cooking for about 3 minutes.
- Mix in the cream of chicken soup, Cajun seasoning, onion powder, salt, and pepper. Then lower the heat.
- Stir in the mayo until it’s all mixed up with the rest of the stuff.
- Lay out the hamburger buns on a baking sheet and pop them in the oven until they’re slightly browned, which should take about 4-5 minutes.
- Take the buns out of the oven and scoop the ground chicken mixture onto the bottom buns.
- Sprinkle that shredded cheese over the chicken mixture and then pop the top buns on.
- Serve up those sloppy joes hot and ready to enjoy!
