Cajun Chicken Sloppy Joes

Ingredients:

  • 1 lb lean ground chicken
  • 15 oz canned corn, drained
  • 1/2 cup diced red onions
  • 10.5 oz condensed cream of chicken soup
  • 2 tbsp Cajun seasoning
  • 1 tbsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup mayo
  • 4 large hamburger buns
  • 1 cup shredded mozzarella and cheddar cheese blend

Instructions:

  1. Preheat your oven to 400°F to get those buns toasty.
  2. In a big pan on medium-high heat, cook up the ground chicken until it’s all crumbly and cooked through.
  3. Toss in the canned corn and diced red onions, and keep cooking for about 3 minutes.
  4. Mix in the cream of chicken soup, Cajun seasoning, onion powder, salt, and pepper. Then lower the heat.
  5. Stir in the mayo until it’s all mixed up with the rest of the stuff.
  6. Lay out the hamburger buns on a baking sheet and pop them in the oven until they’re slightly browned, which should take about 4-5 minutes.
  7. Take the buns out of the oven and scoop the ground chicken mixture onto the bottom buns.
  8. Sprinkle that shredded cheese over the chicken mixture and then pop the top buns on.
  9. Serve up those sloppy joes hot and ready to enjoy!
