Cheesy Mashed Potato Puffs

Ingredients:


– 3 cups mashed potatoes (leftover or freshly made)
– 1 cup shredded cheddar cheese
– ¼ cup grated Parmesan cheese
– 2 large eggs
– ¼ cup all-purpose flour
– 2 tablespoons chopped chives
– ½ teaspoon garlic powder
– Salt and pepper to taste
– ¼ cup breadcrumbs
– Olive oil spray

Instructions

Prepare the Mixture:


Preheat your oven to 400°F (200°C). Grease a mini muffin tin with olive oil spray. In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, eggs, flour, chives, garlic powder, salt, and pepper. Mix thoroughly until fully incorporated.

Shape the Puffs:


Scoop heaping tablespoons of the mixture and roll them into balls. Lightly coat each ball with breadcrumbs.

Bake to Perfection:


Place the coated potato balls into the greased muffin tin. Spray the tops with olive oil to help them crisp. Bake for 20–25 minutes, or until golden brown and crispy.

Serve and Enjoy:


Let the puffs cool for a few minutes before removing them from the tin. Serve warm with sour cream or your favorite dipping sauce.
