Ingredients
– 3 tbsp olive oil
– 1 packet (1 oz) ranch seasoning mix
– 1/2 cup grated Parmesan cheese
– 2 lbs baby potatoes or small Yukon Gold potatoes
– 1 cup shredded cheddar cheese
– 1/2 tsp garlic powder
– 1/2 tsp onion powder
– 1/2 tsp paprika
– 1/4 tsp black pepper
– 1/4 tsp salt
– 1/4 cup chopped fresh parsley (optional, for garnish)
– 2 green onions, sliced (optional, for garnish)
Instructions
1. Heat the oven to 425°F (220°C).
2. Clean the potatoes and cut large ones into bite-sized pieces. Halve the small ones if too big.
3. In a large bowl, coat the potatoes well with olive oil.
4. Sprinkle with ranch mix, Parmesan, garlic powder, onion powder, paprika, pepper, and salt; mix until evenly coated.
5. Arrange the potatoes on a lined baking sheet in one layer.
6. Roast for 25-30 minutes, flipping midway, until crispy and golden brown.
7. Remove from the oven and sprinkle cheddar cheese over the potatoes.
8. Bake for an extra 5 minutes until the cheese is bubbly.
9. Garnish with parsley and green onions if desired.
10. Serve hot as an appetizer or side dish.
