Ingredients:
Crust:
- 1 cup graham cracker crumbs
- 2 tbsp brown sugar
- A small pinch of salt
- 2 1/2 tbsp melted butter
Cheesecake:
- 8-oz softened cream cheese
- 2 tbsp sour cream or Greek-style yogurt
- 1/3 cup sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C) and line 8 cups of a muffin pan with paper liners.
- Begin with the crust by mixing graham cracker crumbs, brown sugar, and salt in a medium bowl. Add melted butter and mix until the crumbs are well moistened. Press about a tablespoon of this mixture into each muffin cup, creating an even layer.
- For the cheesecake, cream together the cream cheese, sour cream (or yogurt), and sugar until smooth. Mix in the egg and vanilla extract.
- Add 1 tbsp of chocolate chips to each muffin cup, then evenly distribute the cheesecake batter on top, covering the chocolate chips. Finish by sprinkling another tablespoon of chocolate chips on top of each.
- Bake for 20-25 minutes, or until the cheesecakes are set. Allow them to cool in the pan for 10 minutes before transferring to a cooling rack to cool completely. Chill before serving for the best experience.
