Copycat Nando’s PERi PERi Sauce

Ingredients


– 4 red chili peppers (fresh or dried, adjust for heat level)
– 4 cloves garlic, minced
– ¼ cup olive oil
– 2 tablespoons red wine vinegar
– 1 tablespoon lemon juice
– 1 tablespoon smoked paprika
– 1 teaspoon ground cayenne pepper (adjust for heat preference)
– Salt, to taste
– Optional: 1 teaspoon honey or sugar for a touch of sweetness

Instructions


1. Prepare the chili peppers:
– If using fresh chilies, remove the stems and seeds (for a milder sauce, remove more seeds).
– If using dried chilies, soak them in hot water for 10 minutes to soften, then drain.
2. Blend the ingredients:
– In a blender or food processor, combine the chili peppers, garlic, olive oil, red wine vinegar, lemon juice, smoked paprika, cayenne pepper, and salt.
– Blend until smooth. If the mixture is too thick, add a tablespoon of water or olive oil to reach your desired consistency.
3. Adjust the flavor:
– Taste the sauce and adjust seasoning. Add more salt, lemon juice, or a touch of honey/sugar to balance the heat and acidity if needed.
4. Cook the sauce (optional):
– For a more intense flavor, transfer the blended sauce to a small saucepan and simmer over low heat for 5-7 minutes. Let it cool before using.
5. Store and use:
– Pour the sauce into a clean jar or container. Store in the refrigerator for up to 2 weeks. Shake or stir before each use.
