Ingredients
– 1/2 pound bacon (chopped, preferably thick or applewood smoked)
– 1 small yellow onion (diced)
– 3 cloves garlic (minced)
– 1 pound lean ground beef
– 1 tablespoon chili powder
– 1 teaspoon salt
– 1/2 teaspoon pepper
– 3 (15 oz) cans pork and beans (not drained)
– 1 (15 oz) can cannellini beans (drained)
– 1 (15 oz) can kidney beans (drained)
– 1 cup barbecue sauce (Sweet Baby Ray’s recommended)
– 1/2 cup ketchup
– 1/4 cup brown sugar
– 2 tablespoons yellow mustard
– 1 tablespoon Worcestershire sauce
– 1 tablespoon apple cider vinegar
Instructions
1. Preheat the oven to 350°F (175°C).
2. In a large Dutch oven or heavy-bottom pot, add the bacon and cook until crisp. Remove the bacon with a slotted spoon, leaving some bacon grease in the bottom.
3. Add the diced onion to the pot and cook until nearly tender.
4. Add the minced garlic and ground beef, cooking and crumbling the beef until it’s no longer pink. Drain any excess grease.
5. Stir in the cooked bacon, chili powder, salt, pepper, pork and beans, cannellini beans, kidney beans, barbecue sauce, ketchup, brown sugar, yellow mustard, Worcestershire sauce, and apple cider vinegar. Mix until just incorporated.
6. Bake in the preheated oven for 45 minutes.
