Crab Stuffed Cheddar Bay Biscuits with Lemon Butter

Ingredients:

  • 1 package Cheddar Bay Biscuit Mix
  • 1 tsp garlic
  • 1 tsp Italian seasoning

For the crab filling:

  • 1 pound lump crab meat, fully cooked
  • 1/4 tsp paprika
  • 1/2 tsp onion powder
  • 1/2+ cup mayonnaise
  • 1 tbsp mustard
  • 1/2 sleeve Ritz crackers, crushed
  • 1 cup grated parmesan

Instructions:

  1. Make the biscuit mix according to package directions and set aside.
  2. Preheat the oven to 375°F (190°C). Spray two muffin tins with nonstick spray.
  3. In a bowl, combine the crab meat, paprika, onion powder, mustard, mayonnaise, and crushed crackers. Stir to combine well, adding a touch more mayonnaise if needed.
  4. Using a scoop, place some biscuit mix on your hand that has been dusted with flour, and form a cup shape with the dough.
  5. Take a scoop of the crab mix and place it in the cup part of the biscuit dough.
  6. Cover the biscuit with a little more biscuit dough. Continue until you have used all the dough.
  7. Place each stuffed biscuit into a muffin tray.
  8. Bake for 12 to 15 minutes.
  9. Brush with a mixture of melted butter and 1 tsp of lemon juice.
