Creamy Parmesan Chicken Casserole

Ingredients:

  • 12 oz penne pasta
  • 2 cups cooked chicken, shredded
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1 cup Parmesan cheese, grated
  • 2 cups mozzarella cheese, shredded
  • 1 tablespoon garlic, minced
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1/2 cup fresh parsley, chopped

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cook penne pasta according to package instructions until al dente, drain, and set aside.
  3. In a saucepan, melt butter over medium heat and sauté garlic until fragrant.
  4. Add heavy cream, chicken broth, and Parmesan cheese. Stir and bring to a simmer.
  5. Remove from heat and mix in the cooked pasta, chicken, and half of the mozzarella cheese. Season with salt and pepper.
  6. Transfer to a baking dish and top with the remaining mozzarella cheese.
  7. Bake for 25 minutes or until the cheese is bubbly and golden brown.
  8. Garnish with chopped parsley before serving.
