Dreamy Creamy Orange Cupcakes

Ingredients

– 1 1/2 cups all-purpose flour
– 1 cup granulated sugar
– 1/2 cup butter, room temperature
– 2 large eggs
– 1/2 cup orange juice
– 1 tablespoon orange zest
– 2 teaspoons baking powder
– 1/4 teaspoon salt

For the Frosting:


– 1 cup unsalted butter, room temperature
– 4 cups powdered sugar
– 2 tablespoons orange juice
– 1 tablespoon orange zest
– 1/2 teaspoon vanilla extract

Instructions

1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
2. In a mixing bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
3. Mix in orange zest and orange juice.
4. In another bowl, whisk together flour, baking powder, and salt. Gradually add to the creamed mixture and mix until just combined.
5. Fill cupcake liners 2/3 full with batter and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
6. For the frosting, beat butter until creamy. Gradually add powdered sugar, orange juice, zest, and vanilla, beating until smooth and fluffy.
7. Once cupcakes are cool, frost with the orange frosting.
