Ingredients:
- ½ cup butter
- 1 lemon, juiced
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- ½ teaspoon dried parsley
- 3 cloves garlic, minced
- 6 (4 ounce) fillets cod
- 2 tablespoons lemon pepper
Instructions:
- Preheat your oven to 350°F (175°C).
- In a medium saucepan over medium heat, melt the butter. Stir in the lemon juice, salt, black pepper, dried parsley, and minced garlic. Bring to a boil, then reduce heat and simmer for about 10 minutes, or until slightly thickened.
- Arrange the cod fillets in a single layer on a medium baking sheet.
- Drizzle half of the lemon butter mixture over the cod fillets. Ensure each fillet is evenly coated. Sprinkle with lemon pepper.
- Cover the baking sheet with foil. Bake in the preheated oven for 15 to 20 minutes, or until the fish flakes easily with a fork.
- Once baked, carefully remove the foil and pour the remaining lemon butter mixture over the fillets.
