Ingredients
- 2 ½ cups cooked and shredded chicken
- 1 cup corn kernels
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup salsa
- 1 cup sour cream
- 10 oz pasta
- 2 tablespoons taco seasoning
- 2 cups Mexican cheese blend
Instructions
- Preheat oven to 350°F.
- Bring a large pot of water to boil and cook pasta 2 minutes short of package directions. Drain and set aside.
- In a large bowl, mix together sour cream, salsa, and taco seasoning until well combined.
- Add shredded chicken, black beans, corn, and 1 cup of cheese to the sour cream mixture. Stir until evenly combined.
- Stir in the cooked pasta until well incorporated. Pour the mixture into a large casserole dish.
- Top with the remaining cheese.
- Bake for 20-25 minutes until the cheese is melted and bubbly, and the casserole is heated through.
