Ingredients
– 1 3/4 cups all-purpose flour
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 1 tablespoon pumpkin pie spice
– 1 cup canned pumpkin puree
– 1/2 cup vegetable oil
– 2 large eggs
– 1 1/4 cups granulated sugar
– 1 teaspoon vanilla extract
– 4 oz cream cheese, softened
– 1/4 cup powdered sugar
– 1 tablespoon milk
Instructions
1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
2. In a large bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice.
3. In another bowl, mix the pumpkin puree, vegetable oil, eggs, sugar, and vanilla extract until well combined.
4. Gradually add the dry ingredients to the wet mixture and stir until just combined.
5. In a separate bowl, beat the cream cheese, powdered sugar, and milk until smooth and creamy.
6. Fill each muffin cup halfway with the pumpkin batter.
7. Add a spoonful of the cream cheese mixture on top and swirl it with a toothpick to create a marble effect.
8. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
9. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
