Ingredients
– 3 ½ cups Fruity Pebbles Cereal
– 3 cups mini marshmallows
– 2 tablespoons unsalted butter
– 16 oz cream cheese, softened
– ¼ cup powdered sugar
– 1 tsp vanilla
– 7 oz tub marshmallow creme
– 1 ½ cup cereal, lightly chopped
Instructions
1. In a large microwave-safe bowl, combine the Fruity Pebbles, mini marshmallows, and unsalted butter. Microwave on high for 2-3 minutes until the marshmallows start to expand.
2. Quickly stir the mixture until all the cereal is evenly coated with the melted marshmallows and butter. While still warm, spoon the mixture into taco shell molds or form small taco shapes by draping over a narrow rolling pin or the handle of a wooden spoon, suspended between two objects. Allow to cool and set until firm, creating your cereal taco shells.
3. For the filling, in a large mixing bowl, blend the softened cream cheese with powdered sugar and vanilla until smooth. Fold in the marshmallow creme and then gently mix in the additional chopped cereal for a bit of texture.
4. Carefully spoon or pipe the cheesecake filling into the cereal taco shells. Chill in the refrigerator for at least 1 hour to firm up the filling before serving.
5. Optionally, garnish the tacos with extra Fruity Pebbles or sprinkles for a more festive look.
