Ingredients
For the Pistachio Crust:
– 1 1/2 cups pistachio nuts, finely ground
– 1 cup all-purpose flour
– 1/2 cup unsalted butter, melted
– 1/3 cup granulated sugar
For the Cream Cheese Layer:
– 16 oz cream cheese, softened
– 1/2 cup granulated sugar
– 2 eggs
– 1 teaspoon vanilla extract
For the Blackberry Mousse Layer:
– 2 cups fresh blackberries
– 1/2 cup granulated sugar
– 1 tablespoon lemon juice
– 1 1/2 teaspoons gelatin, dissolved in 2 tablespoons warm water
– 1 cup heavy cream, whipped to stiff peaks
Instructions
For the Pistachio Crust:
1- Preheat oven to 350°F (175°C). Line a 9×9-inch pan with parchment paper.
2- Combine ground pistachios, flour, melted butter, and sugar until well mixed.
3- Press into the bottom of the prepared pan and bake for 10-12 minutes until set. Allow to cool.
For the Cream Cheese Layer:
4- Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla, beating until creamy.
5- Pour over the cooled crust and bake for 20 minutes. Let cool and chill for 30 minutes.
For the Blackberry Mousse Layer:
6- Blend blackberries, sugar, and lemon juice until smooth. Strain to remove seeds.
7- Stir gelatin into blackberry mixture, then fold in whipped cream.
8- Spread over the cream cheese layer. Chill until set, about 2 hours.
To Serve:
9- Garnish with fresh blackberries, chopped pistachios, and a dusting of powdered sugar.
