Hocus Pocus Cookies

Ingredients

For the Cookies:
– 2 cups white sugar
– 2 cups white chocolate chips
– 2 ½ cups all-purpose flour
– 1 ½ cups cake flour
– 1 ½ teaspoons baking soda
– 1 ½ teaspoons cornstarch
– ¾ teaspoon salt
– 1 ½ cups butter, softened
– 3 large eggs
– 3 teaspoons vanilla extract

For the Decoration:
– Halloween sprinkles
– Orange, green, and purple gel food coloring

Instructions

1. **Prepare Baking Sheet:**
Line a baking sheet with parchment paper and set it aside.

2. **Cream Butter and Sugar:**
In a stand mixer, beat the softened butter and white sugar on high speed until light and fluffy.

3. **Add Eggs and Vanilla:**
Add the eggs one at a time, mixing well after each addition. Blend in the vanilla extract until fully incorporated.

4. **Mix Dry Ingredients:**
In a separate bowl, whisk together the all-purpose flour, cake flour, baking soda, cornstarch, and salt.

5. **Combine Wet and Dry Ingredients:**
Gradually add the dry ingredients to the butter mixture, mixing on medium speed until just combined.

6. **Color the Dough:**
Divide the dough into three equal portions. Use gel food coloring to color each portion—one orange, one green, and one purple. Knead each portion until the color is evenly distributed.

7. **Form the Cookies:**
Scoop about 2 teaspoons of each colored dough, roll them into individual balls, then press the three colors together without blending. Form into a ball and slightly flatten.

8. **Add Sprinkles and Chips:**
Roll the edges of the dough balls in Halloween sprinkles. Place them on the prepared baking sheet, pressing white chocolate chips into the top and sides of each cookie.

9. **Chill Dough:**
Refrigerate the cookies for 30 minutes to allow the dough to firm up.

10. **Preheat Oven:**
Preheat your oven to 400°F (200°C).

11. **Bake the Cookies:**
Arrange the chilled dough balls on the parchment-lined baking sheet, spacing them about 2 inches apart. Bake for 12-14 minutes, or until the edges are set. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

12. **Store:**
Once cooled, store the cookies in an airtight container to keep them fresh.
