Ingredients
– 1 1/2 cups Italian-style dried breadcrumbs
– 1 1/3 cups freshly grated Parmesan, divided
– 1 teaspoon salt
– 2 16-ounce packages mozzarella cheese sticks
– 4 large eggs, beaten to blend
– 1 1/2 cups vegetable oil
Instructions
1- In a medium bowl, combine breadcrumbs, 1 cup Parmesan, and salt.
2- Cut each mozzarella stick in half.
3- Beat eggs in a shallow bowl. Dip cheese sticks into the eggs, then coat in breadcrumb mixture. Repeat for double coating.
4- Place on a baking sheet, cover, and freeze for 2 hours.
5- Heat oil over medium heat. Fry cheese until golden brown, about 1 minute per side.
6- Transfer to plates, sprinkle with remaining Parmesan, and serve.
