Ingredients
– 1 loaf rye bread, cubed
– 1 pound corned beef, sliced
– 1 cup sauerkraut, drained
– 1 cup Swiss cheese, shredded
– 1 cup Thousand Island dressing
– 1/2 cup mayonnaise
– 1 tablespoon Dijon mustard
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– Fresh parsley, chopped (for garnish)
Instructions
1. Preheat your oven to 350°F (175°C).
2. Grease a 9×13 inch baking dish with cooking spray or butter.
3. Layer half of the rye bread cubes evenly at the bottom of the baking dish. Top with half of the corned beef, half of the sauerkraut, and half of the Swiss cheese.
4. In a medium bowl, mix Thousand Island dressing, mayonnaise, Dijon mustard, garlic powder, and onion powder until smooth. Spread half of this sauce over the layered ingredients.
5. Repeat the layering with the remaining rye bread, corned beef, sauerkraut, and Swiss cheese. Pour the remaining sauce over the top.
6. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is melted and bubbly.
7. Let the dish cool for a few minutes. Garnish with chopped parsley before serving.
