Ingredients
– 2 cups shredded sharp Cheddar cheese
– 2 cups shredded Monterey Jack cheese
– 9 large eggs, lightly beaten
– 1 teaspoon garlic powder
– 1/2 teaspoon salt
– 1/2 cup chopped pickled jalapenos, drained
– 1/2 cup chopped pimentos, drained
– 1 tablespoon butter (for greasing the baking dish)
Instructions
1. Prep the ingredients:
– Shred the Cheddar and Monterey Jack cheese and set aside.
– In a bowl, lightly beat the eggs, then stir in the garlic powder and salt. Set aside.
– Drain and chop the pickled jalapenos and pimentos. Make sure they are well-drained to avoid excess moisture.
2. Grease the baking dish:
– Butter a 13×9-inch baking dish to prevent sticking.
3. Assemble the mixture:
– In the greased baking dish, combine the shredded cheeses, chopped jalapenos, and pimentos, mixing them evenly.
4. Add the eggs:
– Pour the lightly beaten eggs evenly over the cheese and vegetable mixture, ensuring everything is well-coated.
5. Bake the bites:
– Place the dish in a preheated 325°F (165°C) oven. Bake for 25-35 minutes, or until the center is set (test with a toothpick—it should come out clean) and the top is lightly firm and golden.
6. Cool and serve:
– Allow the dish to cool for a few minutes before slicing into bite-sized pieces.
Enjoy!
