Ingredients:
- 1 ½ pounds lean ground beef
- 2 cups diced onion
- ½ cup diced bell pepper
- 1 ounce taco seasoning (1 packet)
- 1 1/2 cups Cheddar cheese, divided
- ½ cup sour cream
- ½ cup mayonnaise
- 2 tablespoons dry Ranch seasoning
- 10 ounces Rotel diced tomatoes with green chilies
- 2 cups Bisquick or favorite biscuit mix
- 1 1/4 cup water, divided
Instructions:
Preheat and Prepare: Preheat your oven to 350°F (175°C) and spray a 13×9-inch baking pan with non-stick cooking spray.
Brown the Beef: In a large skillet, brown the ground beef over medium heat, then drain off any excess grease.
Add Flavor: Add diced onion, bell pepper, taco seasoning, and 1/2 cup of water to the skillet. Stir until well blended, then cover and simmer for about 10 minutes until vegetables are soft.
Prepare Sour Cream Mixture: In a medium mixing bowl, whisk together sour cream, mayonnaise, 1/2 cup of Cheddar cheese, and dry Ranch seasoning until smooth. Set aside.
Prepare Biscuit Layer: In a large bowl, mix Bisquick and 3/4 cup of water to form a soft dough. Press the dough into the bottom of the prepared baking pan and bake for 5 minutes until set.
Layering: Spread the cooked ground beef mixture evenly over the biscuit layer, followed by the Rotel diced tomatoes.
Add Creamy Topping: Spoon the sour cream mixture over the tomatoes and gently spread it over the top of the casserole.
Cheesy Finish: Sprinkle the remaining Cheddar cheese over the casserole.
Bake: Bake for 25 to 30 minutes until the biscuit layer is fully cooked and the casserole is heated through.
