Lemon Pound Cake Cookies

Ingredients

– 2 ¼ cups all-purpose flour
– 1 ½ tsp baking powder
– ½ tsp salt
– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– 1 large egg
– 1 tsp vanilla extract
– Zest of 1 lemon
– 2 tbsp fresh lemon juice
– Powdered sugar for dusting
– Lemon slices for garnish (optional)

Instructions

Step 1: Preparing the Dough

1. Preheat the oven: Set your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
2. Mix dry ingredients: In a small bowl, whisk together the flour, baking powder, and salt. Set aside.
3. Cream butter and sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy (about 2-3 minutes).
4. Add the egg and flavors: Add the egg, vanilla extract, lemon zest, and lemon juice. Beat until fully incorporated.

Step 2: Combining Ingredients

1. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms. Make sure not to overmix.

Step 3: Shaping the Cookies

1. Roll the dough: Scoop tablespoon-sized portions of dough and roll them into balls. Place them onto the prepared baking sheet, spacing them about 2 inches apart.
2. Flatten slightly: Use the back of a spoon or your fingers to gently flatten each ball of dough.

Step 4: Baking the Cookies

1. Bake: Place the cookies in the oven and bake for 10-12 minutes, or until the edges are lightly golden.
2. Cool: Once done, remove the cookies from the oven and let them cool on the baking sheet for 5 minutes. Then transfer to a wire rack to cool completely.

Step 5: Finishing Touch

1. Dust with powdered sugar: Once the cookies have cooled, dust them lightly with powdered sugar for a sweet, finishing touch.
2. Garnish (optional): Add a slice of lemon on top of each cookie for extra decoration.
