– 1 cup chocolate wafer cookie crumbs
– 1/4 cup unsalted butter, melted
– 1 (8-ounce) package of softened cream cheese
– 1 cup heavy cream
– 1 cup powdered sugar
– 1 cup mint chocolate chips
– 1 teaspoon peppermint extract
Instructions
1. Begin by preheating your oven to 325°F (163°C).
2. In a mixing bowl, combine the chocolate wafer cookie crumbs with the melted butter. Make sure they blend together well.
3. Press this crumb mixture into the bottom of a springform pan to create a solid crust.
4. In a separate bowl, beat the softened cream cheese until it becomes creamy and smooth.
5. In another bowl, whip the heavy cream until it reaches soft peaks.
6. Gently fold the whipped cream into the cream cheese mixture until combined.
7. Add the powdered sugar, mint chocolate chips, and peppermint extract, mixing until everything is well incorporated.
8. Pour the cheesecake filling over the prepared crust in the springform pan.
9. Place the cheesecake in the refrigerator and let it chill for a minimum of 4 hours or until it has fully set.
