Mozzarella Stick Onion Rings

Ingredients:

– 2 large white onions
– 3 slices mozzarella cheese
– 2 cups flour (250 g)
– 5 eggs
– 2 cups breadcrumbs (230 g)
– Oil for frying
– Marinara sauce for dipping

Directions:

1. Preparation:
– Peel the onions and cut them into 1-centimeter (½ inch) rings. Carefully separate the rings.
– Slice the mozzarella cheese into 4 even strips per slice.
– Take a smaller onion ring and place it inside a larger one to create a double ring. Fill the space between the rings with the mozzarella strips. For an extra cheesy option, add another layer of cheese. Repeat this for all onion rings. Freeze them for about 1 hour.

2. Coating the Rings:
– Prepare three separate bowls with flour, beaten eggs, and breadcrumbs.
– Take each prepared onion ring and coat it first in flour, then dip it into the beaten eggs, and finally coat it with breadcrumbs. For an extra crispy coating, repeat the process by dipping the rings back into the beaten eggs and breadcrumbs.
– Place the coated rings back into the freezer.

3. Frying:
– Heat oil in a large pot over medium-high heat until it reaches 350˚F (175˚C).
– Carefully place the coated onion rings into the hot oil in batches. Fry them until they turn golden brown, ensuring not to fry for too long to prevent the cheese from melting completely.

4. Serving:
– Once fried, remove the onion rings from the oil and drain them on a paper towel to remove excess oil.
