Pumpkin Spice Rice Krispie Treats

Ingredients

– 4 tablespoons unsalted butter (or vegan butter for a dairy-free option)
– 1/2 cup pumpkin puree
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground nutmeg
– 1/4 teaspoon ground ginger (optional)
– 1 (10-ounce) bag of marshmallows (or vegan marshmallows)
– 6 cups Rice Krispies cereal
– 1/2 teaspoon vanilla extract (optional)
– Pinch of salt

Instructions

1. Prepare the Pan:
Grease a 9×13-inch baking dish with butter or non-stick spray. Set aside.

2. Melt the Butter and Marshmallows:
In a large pot, melt the butter over medium heat. Stir in the pumpkin puree, cinnamon, nutmeg, ginger (if using), and salt. Cook for 2-3 minutes until smooth and slightly thickened. Add the marshmallows and stir continuously until fully melted. Remove from heat.

3. Mix in the Cereal:
Quickly add the Rice Krispies cereal to the melted marshmallow mixture. Stir until all the cereal is evenly coated.

4. Shape the Treats:
Pour the mixture into the prepared baking dish. Use a greased spatula or wax paper to press the mixture evenly into the dish.

5. Cool and Serve:
Allow the treats to cool completely before cutting them into squares.
