Ingredients:
2 fresh cucumbers
2/3 teaspoon of salt
2 large cloves of garlic, finely minced
1 tablespoon of Chinese black vinegar (Chinkiang vinegar)
1 tablespoon of chili oil
1/2 teaspoon of sugar
1/2 teaspoon of regular soy sauce
1 teaspoon of sesame oil
Instructions:
1️⃣ Begin by washing the cucumbers thoroughly under water. Place them on a cutting board and lightly smack them with the flat side of a knife or a rolling pin. This will slightly crush the cucumbers, making them more receptive to the dressing. Cut the cucumbers into bite-sized pieces.
2️⃣ Place the cucumber pieces in a mixing bowl and sprinkle with salt. Mix well and let them sit for about 10 minutes to draw out excess water, enhancing their crispness.
3️⃣ Drain the excess liquid from the cucumbers to keep the salad crisp.
4️⃣ Add the minced garlic, Chinese black vinegar, chili oil, sugar, and soy sauce to the cucumbers. Toss gently to ensure the cucumbers are evenly coated with the flavors.
5️⃣ Drizzle the sesame oil over the salad and give it one final stir to combine all the flavors.
6️⃣ Transfer the salad to a serving dish and enjoy fresh.
