Smothered Chicken with Creamed Spinach, Bacon, and Mushrooms

Ingredients

– 4 boneless, skinless chicken breasts
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– Salt and pepper to taste
– 4 slices of bacon, chopped
– 1 tablespoon olive oil
– 1 cup mushrooms, sliced
– 2 cloves garlic, minced
– 2 cups fresh spinach
– 1 cup heavy cream
– 1/2 cup grated Parmesan cheese
– 1 teaspoon Italian seasoning

Instructions

1. **Season the Chicken**
– Season the chicken breasts with garlic powder, onion powder, salt, and pepper.

2. **Cook the Bacon**
– In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon and set aside.

3. **Cook the Chicken**
– In the same skillet, add olive oil and cook the chicken breasts over medium heat until browned and cooked through, about 5-7 minutes per side. Remove the chicken and set aside.

4. **Sauté the Mushrooms and Garlic**
– Add mushrooms to the skillet and sauté until softened. Add garlic and cook for an additional minute.

5. **Add Spinach and Make the Sauce**
– Stir in the fresh spinach until wilted.
– Pour in the heavy cream, Parmesan cheese, and Italian seasoning. Stir to combine and let simmer for 3-5 minutes until the sauce thickens.

6. **Combine Chicken and Bacon**
– Return the chicken and bacon to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes to heat through.

7. **Serve**
– Serve hot, garnished with extra Parmesan cheese if desired.
