Southern Sweet Potato Pie

Ingredients

  • 3-4 baked sweet potatoes
  • 1 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/2 tsp allspice
  • 1 tsp vanilla extract
  • 1 tsp lemon extract (optional)
  • 1 cup evaporated milk (more if needed)
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 4 large eggs
  • 1 stick butter (softened)
  • 2 regular pie shells or 1 deep dish pie shell

Instructions

  1. Prep Sweet Potatoes: Begin by baking or boiling the sweet potatoes until tender. Once cooked, peel and mash them thoroughly.
  2. Preheat Oven & Prep Pie Shells: Heat your oven to 350°F (175°C). Bake the pie shells lightly to prevent sogginess.
  3. Mix Ingredients: In a large bowl, combine the mashed sweet potatoes, spices, extracts, evaporated milk, sugars, eggs, and butter. Whisk until smooth, ensuring no lumps remain.
  4. Fill Pie Shells: Pour the filling into the pie shells, dividing evenly if using two regular shells, or filling the deep dish shell completely.
  5. Bake: Bake the pies for about 50 minutes, or until they are firm and fully set.
  6. Serve: Let the pies cool before serving, allowing the flavors to meld together beautifully.
